The "Pasta King" is: Master Chef Andreino Desantis
Andreino learned the arts of great cooking, the secrets of the restaurant business, the graces customers appreciate and return for - by hard work and over 40 years of experience. He was born into this business, and his own gifts and talents have made him both the “Chef to the Stars” and “Pasta King.”
He was born at Rieti in Abruzzi near Rome, Italy, he was the youngest of five sons. His farming family had close ties to his famous “Uncle” Alfredo’s, whose trattoria in Rome had already received international acclaim. The trattoria became Andreino’s second home, where raised in the business as if a son, he found a strong desire to grow beyond the limited opportunities of a small rural town and even Rome itself. In this, he had his parents’ blessing.
Hundreds of trattorias dot Rome, but only one Alfredo’s, Andreino loves to tell how the place was put on the map. By chance, Mary Pickford and Douglas Fairbanks, Sr. had discovered Alfredo’s restaurant. He prepared prepared his signature dish for them, fettuccine Alfredo, and they loved it! They promised to return, and as a token of their appreciation for the food and hospitality, Alfredo had their autographs engraved on a golden spoon for them. They kept their promise. 60 years later, the spoon is still on display. Desantis did everything a future restaurant owner must do; he shelled peas, cleaned dishes and table, and mopped the floors. Andreino learned how to select and purchase quality ingredients for great dishes. During his years of culinary apprenticeship, he met and prepared his meals for celebrities and dignitaries visiting Rome.
With stars in his eyes Andreino headed to America to make his name and begin his own journey in the restaurant and catering business. He started in New York city learning the service side of the business at several of the most prominent establishments in the city. He later moved to St. Louis where he started a family and opened his first restaurant. He soon gained a reputation as an amazing chef and host, over the years, he has enjoyed the pleasure of serving Ginger Rodgers, Rita Hayworth, Edward G. Robinson, Clark Gable, Bing Crosby, and Bob Hope. He has also enjoyed the company of Gary Grant, John Wayne, Frank Sinatra, Milton Berle, Muhamed Ali, Clint Eastwood, Sammy Davis, Jr., Dean martin and the renowned motivator Tony Robbins. He was also honored to serve President Ronald Reagan’s Inauguration in Washington, D.C. Andreino also served as a consultant to Spago’s Wolfgang Puck to create a pasta buffet for his catering business.
After a long successful run in the restaurant business, Andreino has been focusing on providing amazing catering in Orange County and the surrounding areas. He enjoys sharing his Italian cuisine recipes and techniques.
