Andreino DeSantis learned the arts of great cooking, by hard work and experience, He was born to this business, but his own gifts and talents have make him "Chef to the Stars" around the globe.

He was born at Rieti, in Abruzzi, near Rome (home to many great chefs), the youngest of five sons. His farming family had close ties to his famous "Uncle" Alfredo's family, whose trattoria in Rome had alrady received international notice. This place became DeSantis' second family where, reaised in the business as if a son, he found a strong desire to grow beyond the limited opportunities of a small rural town, and even Rome itself.

He has become a reknowned chef in his own right, and travelled the world and settled in the United States to delight stars, celebrities, and everyone who has a chance to taste Andreino's cooking.

Hundreds of trattorias dot Rome, but there is only one Alfredo's. DeSantis loves to tell how the place was put on the map. By chance, Mary Pickford and Douglas Fairbanks, Sr. had discovered Alfredo's restaurant. He had prepared his signature dish for them, Fettuccine Alfredo, and enthralled them. They promised to return, and they kept their promise!

It was not all glamour. DeSantis did everything a future restaurant owner must do - he shelled peas, he cleaned up; he set tables and mopped the floors. DeSantis learned how to select and purchase quality ingredients for great dishes. In his years of culinary apprenticeship, DeSantis bore witness to those celebrities who came to Rome to dine at Alfredo's.

He has been featured in the dozens of times, and accumulated plenty of memorable photos. His editorial accolades include writeups in dozens of magazines and newspapers across the nation. For example, Cynthia Simone wrote in Orange County Magazine, "DeSantis has been able to blend his very definite personality with the traditions of his heritage." The same magazine later awarded him their highest rating for a restaurant. Similar extollings come from North County Magazine, Ranch and Coast, L.A. Times, and The Rancho Bernardo Magazine.

He has been further reviewed in the Orange County Register, Air Cal Magazine, San Diego Magazine, and Los Angeles Magazine. He has prepared pasta live on shows such as AM Los Angeles, Sun Up San Diego, PM Magazine, and Breakaway. His dishes were served at dinners during the 1984 Olympics and he was in charge of Ronald Reagan's 50th Innaugural Dinner.

Over the years, he has enjoyed the pleasure of serving Ginger Rodgers, Rita Hayworth, Edward G. Robinson, Clark Gable, Bing Crosby, and Bob Hope. He has also enjoyed the company of Gary Grant, John Wayne, Frank Sinatra, Milton Berle, Muhamed Ali, Clint Eastwood, Sammy Davis, Jr., Dean martin and the renowned motivator Tony Robbins. He was honored to serve President Ronald Reagan's Inauguration in Washington, D.C. Andreino also served as a consultant to Spago's Wolfgang Puck to create a pasta buffet for his catering business.

Andreino DeSantis still creates new culinary experiences for customers and friends that exemplify his 'Una Nuova Cucina Romana' - literally a new Roman cooking style. More piquant, more intense, and little to no fat. He is a man of the people, and loves life and celebrating it.
